  • How Much Alcohol Do Bitters Contribute to a Non-Alcoholic Drink?

    71z8Pv+8ubL._SL1500_I was a speaker on a panel for Tales of the Cocktail 2020 in which I said that we should be careful about bitters in non-alcoholic cocktails. In my experience, if you ask someone who orders a non-alcoholic cocktail if "a dash of alcohol is okay" to put bitters in the drink, most people get uncomfortable with the conversation and then almost all of them say no. So I stopped offering. 

    When you ask someone if a touch of alcohol is okay, you're really asking them to agree to drinking alcohol even when they're just told you they'll have the non-alcoholic drink. For several different segments of people who are not drinking, this is like asking "will you violate your sobriety a little bit?" and I've come to see it as inappropriate. 

    After the talk I had a nice chat with Camille Vidal of La Maison Wellness, who has also been thinking about the impact of bitters. The real question was not so much about asking someone if they want to take alcohol in their drink, but what if the impact of bitters in a cocktail is so insignificant that we can skip the question and use them anyway? 

    We know that products legally allowed to be labelled as "non-alcoholic" can have up to .5 percent alcohol in them.  We also know that some food products like bananas and orange juice and even bread can have tiny percentages of alcohol in them. 

    Out of the conversation we decided it would be interesting to do the math. 

     

    What is the alcoholic impact of alcoholic bitters in a non-alcoholic cocktail?

    We'll use Angostura bitters to figure it out.  Angostura bitters are 44.7% ABV

    How much is a Dash? 

    According to Don Lee, 41 dashes equals one liquid ounce. (this is .7 ml per dash). Dave Arnold in Liquid Intelligence puts it at .8ml. 

    A dash is "little less than one milliliter" according to this post. According to this 1/8 tsp is a dash and that's .6ml. 

    I decided to say we're adding 2 dashes or 1.5 ml of alcoholic bitters to a non-alcoholic drink

    1 fluid ounce is approximately 30ml 

     

    To calculate the ABV of a drink, our math is:

    Volume of each alcoholic component x ABV% Divided by Total Volume of Drink

     

    For a one ounce cocktail with 2 dashes of bitters = 1.5ml X 45% / 30ml = .02 = 2 percent 

    For a two ounce cocktail with 2 dashes of bitters = 1.5ml X 45% / 60ml = .01125 = 1.12 percent 

    For a three ounce cocktail with 2 dashes of bitters = 1.5ml X 45% / 90ml = .00755 = .75 percent 

    For a four ounce cocktail with 2 dashes of bitters = 1.5ml X 45% / 120 ml = .005625 = .562 percent 

    For a five ounce cocktail with 2 dashes of bitters = 1.5ml X 45% / 150 ml = .0045 = .45 percent 

     

    First Conclusion: If you want to make a cocktail that's legally non-alcoholic with 2 dashes of Angostura bitters, the cocktail must be 5 ounces in volume and contain no other alcohol. 

    Soft_see1Now let's look if we used a non-alcoholic spirit in the five-ounce drink along with bitters.

    A non-alcoholic spirit like Seedlip must be less than .5 percent ABV. We'll use a Non-Alcoholic Daiquri as an example:

    If we didn't add bitters, we'd have:

    60 ml N/A Spirit at .5% + 30 ml lime + 30 ml simple + 30 ml dilution +  = .3  / 150 = .2 percent ABV cocktail.

    And with bitters plus n/a spirit, we have: 

    60 ml N/A Spirit at .5% + 30 ml lime + 30 ml simple + 30 ml dilution + 1.5ml Angostura bitters at 45% = .3 + .675 / 150 = .65 percent.

     

    A 5-ounce cocktail with 2 ounces of non-alcoholic spirit base and 2 dashes of bitters is barely over the .5 ABV limit, still under 1 percent ABV.

    Second Conclusion: The bitters in a cocktail with n/a spirit contribute more alcohol to the overall drink than the "non-alcoholic spirit," as the bitters are so concentrated in alcohol.  

     

    Final Boss Conclusion: If you wanted to serve legally non-alcoholic (<.5%) cocktails with bitters, you can 

    1. Use non-alcoholic bitters, such as the ones from Dram Apothecary
    2. Make sure the drink is at least 5 ounces (including dilution) in volume for cocktails with 2 dashes of bitters
    3. If you want to make the drink with a non-alcoholic spirit base like Seedlip, dial down the bitters to one dash or leave them out to stay within the legal limit if your drink is 5 oz or less.

  • Simple Starter Seedlip Recipes – Non-Alcoholic Cocktails

    SeedlipI make hundreds of non-alcoholic cocktails each year for tech events, at which a fair percentage of event attendees do not consume alcohol. I've made it a policy to have drinks that are of equal quality to the alcoholic ones, and for that Seedlip has come in very handy. 

    Many people have issues with Seedlip – it's pricey for one, they call it a "non-alcoholic spirit" which annoys people, and more importantly people tend to try it as a gin and put it into tonic water so I think it's mostly a lack of understanding.  Trust you me that is not its best use! So below I've put some super simple recipes I often make with Seedlip. These are so good! 

    In general, I find Seedlip can be a touch perfumy which is both its strength and weakness. The trick to using it is usually to put it up against strong flavored syrups – below I use maple syrup and passion fruit syrup in drinks. But that Daiquiri is just terrific with simply lime and sugar. 

     

    Garden Cooler 

    This is merely a Daiquiri using Seedlip Garden, and it is magnificent – it will convert all skeptics. If I were making something like a Mojito at the event I would toss in some soda water and mint in this recipe much like converting a standard Daiquiri to a Mojito. 

    1 oz Lime Juice 

    .75 – 1 oz Simple Syrup

    2 oz Seedlip Garden

    Shake with ice or just mix together (for events I never shake cocktails but I may add some dilution, this one can take some water)

    Pour over ice and garnish with a lime wheel

     

    Passion Punch

    This drink pairs Seedlip Spice's "winter spice" notes with passion fruit, much like you can do with Angostura Bitters. If I'm doing an event with drinks served over big 2-inch ice cubes, I'll use this drink as the non-alcoholic "stirred" cocktail despite its ingredients. I'm a huge, huge fan of Small Hand Foods passion fruit syrup so I'd definitely stay on-brand with this if you can.

    I used to also add The Ginger People's ginger juice to this drink, but about a year ago their juice started tasting really pasteurized (I assume it is pasteurized, it just didn't taste like it). It's a great improvement to add something spicy against the passion fruit so you may consider an alternative or infusing ginger into Seedlip perhaps? 

    2 ounces Seedlip Spice

    .75 ounce Small Hand Foods Passion Fruit Syrup

    .75 ounce Lemon Juice

    Shake (or just mix) with ice and pour over a large ice cube. (Regular ice cubes are fine too.)

    Garnish with a lemon peel expressed over the top of the drink and dropped in. 

     

    N/A Maple Cooler

    I make a super popular Rye Maple Sour for events (rye whiskey, maple simple, lemon) and this is my non-alcoholic alternative with a similar taste profile. Honestly it might be better than the boozy version. 

    1.5 oz Seedlip Spice

    .75 oz Lemon Juice 

    .75 oz Maple Simple Syrup (1:1 with water)

    Shake (or just mix) with ice  and pour over ice.

    Garnish with a lemon peel expressed over the drink and dropped in. 

     

    Please give these drinks a try- they not only validate Seedlip, they are delicious on their own and will please drinkers and non-drinkers alike.

  • What to Drink When You’re Not Drinking, According to Bartenders

    It's January, and maybe you're taking a break from drinking so much or maybe you've resolved to drink less. Here are some suggestions on what to drink instead. 

    I asked my bartender pals on Facebook what they drink when they're not drinking alcohol. I didn't expect 100 of them to reply! I put them into various categories mostly based on their first answer to the question. There are some conclusions at the end. It is very long. 

     

    JugWater! And Coconut Water

    It seems that people who like plain water also like herbal tea. 

    Daniel Castro of La Banane in  Toronto, Ontario:  Water. I'm getting older, I get migraines, and so looking after my health is #1. Herbal, peppermint tea is another go-to.

    John Lermayer, Sweet Liberty, Miami:  Alkaline water and green tea (together and separately)

    Paul Bradley of Dubai: Large amounts of water, St Clements, lashings of ginger beer. And coconut water

    Jabriel Donohue of Circadia, Seattle: Plain soda water, herbal tea, non alcoholic beer

    Francis Schott of Stage Left & Catherine Lombardi a restaurants, New Brunswick, NJ: Blenheim Ginger Ale (not-so-hot) out of the painted glass bottle (never plastic) or Elderflower syrup and soda. 2 oz in 6 oz seltzer- my favorite brand is Austrian by Nikolaihof. Elderflower syrup in German is Holunderblütensirup (available through Michael Skurnik Wines). Fun to drink – fun to say. I keep a bottle in my refrigerator at all times. 

    Zachary A. Evans: Fresh squeezed lemonade, ginger ale, and cran. Equal parts.

    Ole Buddrus: Technically speaking bitters contain alcohol, that aside my favorite is still ginger ale and angostura, preferably East Imperial.

    Ben Johnson of The Imperial Life, Asheville, NC: I find myself drinking a lot of Coke, or specialty soda in general. When I go out to eat or to a bar, my go to is almost always Peach Nehi soda if they've got it (and most places in Western North Carolina do). I'll also crush a soda water with lime after a long shift. And if I'm at a real dive, I'll generally go for a grapefruit juice (out of a can) and soda, as it looks more like a drink. There's really no reason to be at a dive bar if you're not drinking, so I find it best to mask it at these types of places. 

     

    Tonic Water, Modified

    Coffee, Please

    CoffeeFred Yarm of Loyal Nine in Boston: My number one nonalcoholic drink is coffee, hot and black, although I have no problem drinking it room temperature such as during a shift or if I have left overs from yesterday's pot. Otherwise, the majority of my nonalcoholic drinking consists of water either still or sparkling. And medicinally (besides its use for making Bucks and Mules), ginger beer such as a ginger-forward one like AJ Stephens is my go to.

    Tom Zyankali of Zyankali Bar, Berlin:  Café au laut with Vietnamese coffee

    Anthony DeSerio:  Coffee… lots and lots of coffee. Verners ginger ale when i can get it.

    Or Geshury: Espresso tonic. Cold brew from coconut water. Jasmine green speedballed with chamomile/peppermint depending on the time of day. Coconut water + activated charcoal + sea salt (hangover preventative). Fevertree sodas. Mexicoke. Bitters lime and soda when at a bar and not drinking.

I have 2-3 empty clear growlers that I fill with water, various fruits (watermelon, lemon, raspberry, peaches, etc), spices (mint, lemon verbena, basil), and some really good quality tea. Leave it out in the sun for a couple of hours and I will go thru a jug every 2-3 days. Love my sun tea.

    Matthew Rowley, writer: For me it's tea. Iced tea all year and, when the mercury dips, hot tea in an old 500 ml West German beer stein. First one goes down usually before dawn. Second by 7am or so. A third only if I'm not going to the gym that day. Between hot and iced teas, I usually dispatch 2-4 liters per day.  I may have a tea problem.

     Niquito Constan: mate-cocido (a famous argentinean infusion) with milk and mascabo (red sugar), coffee with milk and honey, ginger beer whenever I can lay myself on one. I tend to mix tonic with juices. Homemade guarana soda, or homemade pomegranate with soda! From time to time I go full on zombie mode and drink guarana flavoured energy drink called V.

    Jen Ackrill, Top of Waikiki, Hawaii: Technically when I'm "not drinking" I'm drinking Dolin Blanc with soda and a grapefruit zest, but when I'm NOT drinking it's Yogi Egyptian Licorice Tea, hot or cold!

    Blake Pope of Kindred, North Carolina: Switchel.  It's composition is incredibly simple – usually, just three ingredients: seltzer, apple cider vinegar, and either honey, molasses or maple syrup. I love the simplicity. Kindred currently has a pomegranate switchel on tap and I can’t get enough.

    Leilani Vella:  I don't find the trade of sugar for alcohol to be a healthier choice. So kombucha, bitters and soda, lemon grass mint tea, orange slice with fresh mint a splash of lemon juice and soda, or fresh juiced ginger, lemon apple and greens.

    Alex Smith, Whitechapel, SF: I have a favorite recovery drink when I go to the gym – when I am coincidentally also "not drinking." Combo of the following: some concentrated cold brew coffee w/ chicory (4 oz), hemp milk (2 oz), natural cane ginger beer (2 oz), coconut water (10 oz), and some Bob's Red Mill chocolate protein powder (3 tbs).

     

    Conclusions

    So if you wanted to take something away from this, here is what I see. Bartenders like:

    • Tea, perhaps even more than coffee. I did not know this. 
    • Grapefruit and Tonic – If you're a tonic water brand you're going to want to release this as a combination flavor. 
    • Topo Chico is so, so hot right now. (I introduce it to my friends as 'bartender water.') Here's a good NYT story about it's new popularity.
